Old Australian Recipes Printed from a Cook Book from the 1920's


These old Australian recipes have been copied direct from a hand written Australian cook book of a housewife who was known by her relatives and neighbours as an excellent cook. It was a time when good recipes were often passed between friends, and this book even recorded where some of the recipes were obtained.

They were also the days before you could buy groceries online , there were no supermarkets with a  grocery delivery sevice ,  and the housewife would walk to a local corner store to do her grocery shopping and then have to carry home heavy loads of groceries.

Cooking was done in a wood burning stove, and this could not have been very pleasant on a hot summer day. The cooking temperature for the recipies was simply indicated in the cook book as "moderate" or "hot" and tested by putting a bare elbow just in front of the open oven door. In later years this lady moved to a house with a gas oven and then the actual temperature was often  recorded, and this was even further modified by stating which "runner" in the oven was used, such was the care to turn out well cooked and good tasting food.

This was also a time when little thought was given to foods for good health, many recipes used suet, roast meats were cooked in a baking dish with copious amounts of dripping, heavily sprinkled with salt and constantly basted by spooning the dripping over the meat during cooking. The recipes for most cakes were based creamed butter and sugar.

Christmas Cake  (Argus Newspaper)
2 cups butter, 2 cups sugar, 5 cups flour 1 cup currants & raisins, 2 cups sultanas, some peel, 10 eggs, 1 and a 1/2 cups almonds, some cherries, half tea spoon salt, 1 teaspoon spice, & 1 of cinnamon, lemon juice,.
Cream butter & sugar, add eggs separately, sift flour salt & spice and add gradually. When half of flour is in, add other ingredients and then rest of flour. Lemon juice last. Very moderate oven 5 or 6 hours.

Christmas Cake (Auntie Loo)
1 1/2  lb flour, 1 lb butter, 1 lb sugar, 1 lb raisins, 1 lb currants, 1/4 lb peel, 1/4 lb almonds, 1/2 glass brandy,  2 teaspoons baking powder (or 1 1/2 teaspoons of C of T and 3/4 of  soda) little spice, teaspoon salt, 8 eggs.
Beat butter and sugar for 1/2 hour, then break in 8 eggs separately, add fruit, flour and brandy, and lastly baking powder. A little milk may be needed. Bake 4 hours moderate oven.

Christmas Cake  (Mrs Pine)
Beat 1 lb butter 1lb sugar to a cream. Add 10 eggs and beat well. Add fruitalternately with flour etc (fruit - 1 lb currants, 1lb raisins, 1lb sultanas, 1/2 lb almonds, 1/2lb mixed peel some cherries), 1 qt flour (5 cups full), 1 teaspoon soda, 1/2 pkt mixed spice. Add 1 tablespoon treacle and 1 tablespoon brandy. Cook 3rd runner 250F  3 1/2 hours

Christmas Cake  (Sun Newspaper)
1/2lb butter, 1/2lb sugar, 5 eggs, pinch salt, 1lb currants, 1lb sultanas, 2oz lemon peel, 2oz almonds, 1/2lb plain flour, 2oz SR flour, 1/2 a nutmeg, 1 desert spoon each of cinnamon and allspice, 1 teaspoon vanilla.
Cream butter and sugar add eggs one at a time beating well, then fruit, spices and almonds, lastly flour. Cook 3 to 4 hours.

Cherry Christmas Cake  (Sun)
2 1/2lb currants, 1/4lb small mixed peel, 1/4lb glace cherries, 1lb butter, 1lb sugar granulated,, 1/2 grated nutmeg, 5 eggs, 2 tablespoons rum whisky or brandy, a good pinch salt.
Cream butter and sugar, beat in eggs one at a time, add flour and other ingredients, 5 hours.

Rich Christmas Cake
1lb butter beat to a cream with 1lb sugar when quite smooth add 3/4lb raisins, 3/4lb sultanas, 1/4lb cherries, a few almonds, juice and grated rind of a lemon, a pinch of cinnamon and grated nutmeg, yolks of 8 eggs with a wine glass brandy, a teaspoon Parisian essence, 3 cups SR flour, beaten whites, stir 10 minutes. 3 hours.

White Christmas Cake (good)
1lb butter, 2 cups sugar, 4 cups plain flour, 1/2 teaspoon baking powder, 10 eggs, 1/2 lb mixed peel, 1 lb currants, 1/4 lb nuts, 1/2 lb sultanas or raisins, 1/4 lb cherries, 1/2 cup orange juice or milk, vanilla, brandy.
Mix fruit with sifted flour and baking powder. Cream butter and sugar and add eggs separately then add flour/fruit mix very gradually. Bake 3 1/4 hours in Willow Roaster at 250F, or 1/2 mix in 9 inch round tin for 2 hours

White Continental Christmas Cake  (Hushie's,  nice)
 Prepare 1 cup seeded raisins, 1 cup mixed peel, 1/4 cup candied pineapple, 1 cup shredded coconut, 1 cup chopped almonds, 1 cup chopped walnuts and sift onto this 10oz plain flour, 1 level teaspoon baking powder and 1/2 level teaspoon salt, add 1/2 cup brandy and 3 tablespoons of orange juice and mix well.  Cream 6oz butter and 7oz sugar, then add 3 eggs and 1 extra yolk and mix well. Then stir in the fruit and flour mixture. Bake 1 1/2 hours in Willow roaster.

Feather Sponge (Ella)
Beat 3 eggs and half cup sugar, then add 2 heaped tablespoon of corn flour, 1 heaped tablespoon flour,  half teaspoon soda, 1 teaspoon C of T.
Bake in moderate oven.

Honey Sponge
Beat 4 eggs and 1/4 cup castor sugar and 1/2 teaspoon vanilla. Heat together 1 tablespoon butter, 2 tablespoons milk, 1 tablespoon honey and add to the egg mixture alternately with 1 rounded cup SR flour, 1 tablespoon cornflour, pinch salt.
When cooked fill with honey mocha filling :- butter, icing sugar, cocoa, vanilla and coffee essence. Cook sponge 3rd runner, 400F, 20-30 minutes.

Sponge Kisses  (Sun)
Beat 4 eggs & 1 cup sugar well. Add 1 cup SR flour and 1 cup cornflour then 1 tablespoon melted butter and 2 tablespoons boiling water. Put desert spoons on paper on cold tray. 5 minutes in quick oven. Turn paper upside down on damp towel and moisten with cold water to remove kisses. Join together with cream.

Sponge Kisses
Beat 2 eggs and 1/2 cup sugar. Add 1/2 cup SR flour (and a little drop of water). Drop 1 teaspoonful on a slide and bake 8 min at 375F on 2nd runner.

Ginger Snaps
3/4 lb flour, 1 teaspoon ginger, 1 oz sugar, 1 oz butter, 4 oz golden syrup, pinch carb soda dissolved in a little milk.
Mix flour, ginger & sugar. Melt butter & golden syrup and add to dry mix, and then mix in the soda.
Roll out and cut into rounds. Moderate oven 15 minutes.

Anzacs.   (Bob's)
2 cups oatmeal, half cup sugar, 1 cup flour, 1/2 cup melted butter.
Mix table spoon golden syrup, 2 tablespoon boiling water and 1 teaspoon soda till they froth. Mix in dry ingredients and drop 1 teaspoon on floured tray. Slow oven.

Ginger Sponge. (Auntie Loo)
1 cup sugar, 2 cups flour, 1 tablespoon butter rubbed into the flour, 2 teaspoon ginger, 2 tablespoons treacle, 1 egg well beaten, 1 cup milk.
Mix all well and then lastly add 1 teaspoon soda in 1 tablespoon boiling water, beat well for 5 minutes. Bake 3/4 hour.

Ginger Sponge  (Auntie Lil)
Beat 2oz butter and 1/2 cup sugar. Add 2 eggs, 1/2 cup golden syrup, 1/2 cup milk, 1 1/2  cups flour, 1 teaspoon each ginger, spice and soda. Bake in tin, mod oven, 20 minutes.

Sponge  (Edie Moyle)
Beat 4 eggs and small cup sugar. Add 1 small cup plain flour sifted with 1 small teaspoon cream of tartar and 1/2 teaspoon soda dissolved in 1 tablespoon boiling water. 325F, 2nd runner,  25 minutes.

Orange Cake (Auntie Loo)
1/4 lb butter, 1 cup sugar, 3 eggs, 1/4 cup milk, 1 cup SR flour, grated rind of orange.
Cream butter and sugar add eggs (whites and yolks beaten separately) rhind, milk and lastly flour. Bake 1/2 hour on 3rd runner Not quite right needs a little more flour.
Icing - Icing sugar, butter and orange juice.

Coffee Cake  May 5th 1935
Take 1 cup SR flour, 1cup sugar, 1/2 cup butter, 1/2 cup milk, 2eggs, pinch salt.
Cream butter and sugar add eggs and beat well then add milk and when well mixed add the sifted flour with salt, spread in a shallow baking dish and cook in quick oven 25 to 30 minutes and while hot spread with butter and sprinkle with spice and cinnamon and sugar mixed together. Put back in oven for five minutes and serve with butter.

Mocha Cake  (Auntie Lil)
1/4 lb butter, 6oz sugar, 4 eggs, 1/2 lb SR flour, 2 desert spoons coffee essence, 1/2 cup milk. Bake in sandwich tins 300F, 3rd runner, 25 minutes. Top with coffee icing.

Apple Cakes  (Sun, quite nice)
Cream 4oz butter and 4oz sugar, add 1/2 teaspoon vanilla, add 2 beaten eggs, then 4 tablespoons milk alternately with 8oz SR flour and pinch salt sifted.
Put teaspoonful in patty tins (or patty papers), add 1 teaspoon well drained cooked apple, then another teaspoonful of mixture. Bake moderate oven (375F) 15 - 20 minutes on 3rd runner. When cold ice with lemon icing.

Phyl's Little Cakes  (v. good)
Cream 4oz butter and 4oz sugar. Add 2 eggs then 4oz SR flour and 2oz cornflour sifted, and 2 tablespoons milk.
3rd runner 375F for 15 minutes or 400 12 to 15 minutes.

White Mountain Cake. (Mum)
Cream 1/4lb butter and 1 cup sugar, add 4 eggs (saving 1 white for icing). Beat 10 minutes, add 1 1/4 cups SR flour and 2 tablespoons coconut and 1/2 cup milk.
Bake 350F about 25 minutes.
Topping beat 1 tablespoon butter and egg white to a cream, add vanilla essence and enough icing sugar to thicken. Ice and sprinkle with coconut.

Christmas Pudding  (Mum)  Made 1929, 1964 - 65 - 66 - 67 - 63.
Made double quantity for all family. Cooked 6 1/2 hours plus 2 hours on Christmas Day. Rather moist with 8 eggs (no milk).
One cup each fine chopped suet, breadcrumbs, brown sugar, flour, raisins, and currants, half cup chopped citrus or dates, one tablespoon each lemon and orange peel, one teaspoon salt, half teaspoon each cinnamon, nutmeg, ground cloves, ginger and soda. One tablespoon treacle and brandy, 3 or 4 eggs and a little milk, add cherries. Boil 4 hours and 2 hours on Christmas day

Suet Plum Pudding  (Mum)
One cup flour, 1/2 teaspoon soda, 3/4 teaspoon spice, 1 cup fine chopped suet, 1 cup fruit, 1 egg, 1/2 cup sugar, 1 tablespoon treacle and milk. Boil in cloth for 2 hours.

Plum Pudding  (Von)
One cup plain flour, 1/2 cup sugar, 1 cup mixed fruit, spice. Boil 1 cup milk and i tablespoon butter, add 1 teaspoon soda, mix and steam for 3 hours.

Sago Plum Pudding
Two tablespoons sago (cover with water and soak for 1 hour), i cup breadcrumbs, 1/2 cup sugar, 2 tablespoons butter, 1 cup raisins, 1 level teaspoon soda dissolved in boiling water.
Mix all dry ingredients and stir in 1 cup milk. Steam 3 hours.

Christmas Pudding  (Sun)
6oz each of flour and breadcrumbs, 8ozs each suet, sultanas, currants & raisins, 2oz almonds, 6 eggs, 6oz brown sugar, 4oz mixed peel, 1/2 pkt spice, 1 teaspoon salt, 1/2 teaspoon cinnamon, grated rind and juice lemon, 1 grated carrot.
Shred suet and rub into flour, add bread crumbs and fruits. Add spice, sugar, grated rind and carrot. Beat eggs and add, add juice and mix well. Cook in cloth in basin 4 hours. Leave (up to 6 weeks) and boil 2 more hours.

Every Day Plum Pudding
1 cup each of currants, raisins, sigar, lemon rind, 2 cups flour.
Pour 3/4 cup boiling water on 1 tablespoon dripping and 1 tablespoon butter and teaspoon soda. Mix well and let stand overnight. Steam 4 hours in basin.

Orange Coconut Delicious
2 eggs (separated) 1 tablespoon (rounded) butter, 3/4 cup sugar, grated rind 1 orange, 2 rounded tablespoons SR flour, 1 cup milk, 3/4 tablespoon orange juice, 2 tablespoons coconut.
Beat butter sugar and rind till creamy, add flour (half at a time) Combine egg yolks with milk and gradually add - with orange juice. Add coconut, beat whites and fold into mixture. Bake in dish of water for 40 minutes.

Golden Syrup Dumplings.
Make syrup of 1 cup water, 1/2 cup sugar, 1 tablespoon butter and golden syrup. (May need double quantity).
1 cup SR flour and rub in 1 tablespoon butter, add 1 egg and a little milk to make a stiff dough. Make into small balls and boil 20 minutes in syrup. Use immediately.

Chocolate Pudding  (Vera)
Cream 2oz butter and 2oz  sugar, add 1 egg and beat well, add 1oz cocoa blended in 2 tablespoons milk, then add essence of vanilla, then add 4oz SR flour. Steam 1 1/2 hours and serve with thin custard with cocoa blended in.
